UNICORN BBQ CO. X DAHLIA COLLAB
Brisket and Cheese Croissant

Unicorn BBQ Company’s smoked brisket, pickled cucumbers and jalapeños, and Dr. Pepper BBQ sauce wrapped in a Dahlia sourdough croissant with Cooper’s white american cheese and topped with sesame seeds, Maldon salt, and black pepper. SERVED HOT with a side of BBQ sauce. Pair it with some of our Chimichurri Potato Salad for an upgrade to that summer cookout experience!

Key Lime Croissant
Buttery sourdough croissant filled with whipped key lime cream, brown butter graham crumble, toasted vanilla whip and lime zest. Bright, creamy, and just the right amount of zip!

Buttermilk Peach Twice-Baked
A twice-baked croissant filled with soft buttermilk cake, layered with peach jam and syrup, finished with a smooth buttermilk glaze and slices of macerated peach. Juicy, rich, and warm-weather dreamy.

Salted Caramel Sweet Corn Danish
This one comes straight from the heart of two rural Iowans! Layers of sweet corn pudding and roasted corn nestled in croissant pastry, finished with a generous drizzle of salted caramel.

Sour Cherry & Cream Cheese Swirl
Sour cherry spread and whipped cream cheese in a croissant swirl, topped with cherry sugar, cherry icing & fresh cherries. This one continues to be a fan-favorite on our summer menu.

Strawberry Yuzu Poke Cake
Soft buttermilk cake soaked with our house strawberry-yuzu “gelooo” and topped with toasted vanilla whipped cream and fresh strawberries. Juicy, playful, and packed with flavor. (Alex is really excited for this one!)

Brown Butter Chocolate Chip Cookie
A chewy, golden cookie with nutty brown butter, gooey chocolate chips, and a crisp edge. Finished with flaky sea salt to bring it all together. Classic with a little extra depth.

CROISSANT CLASSICS

Ham & Cheese Croissant (available as singles or 4-packs)
Our sourdough croissant is filled with savory ham, melty gruyere, and a touch of Dijon, then topped with everything bagel seasoning for a flavorful, toasty finish. Contains sesame seeds.

Pain Au Chocolat (available as singles or 4-packs)
Our take on the French favorite—layers of buttery sourdough croissant wrapped around rich dark chocolate. Simple, timeless, and deeply satisfying.

House Sourdough Croissant (available as singles or 4-packs)
Flaky, buttery, and wonderfully layered. Made with our signature sourdough for a balanced flavor and perfect chew. The kind of croissant you remember.

Caramel Morning Bun (singles only)
A warm hug of a pastry. This soft, enriched dough is rolled in cinnamon sugar, baked with salted caramel, and topped with brown butter icing. Gooey, golden, and gloriously sticky

PROVISIONS

Sourdough English Muffins
Four light and fluffy sourdough english muffins made fresh weekly in small batches, cooked in clarified butter. Refrigerate or freeze individually for later use.

Chimichurri Potato Salad
Smashed potatoes tossed in garlic aioli and vibrant chimichurri. Herbaceous, creamy, and full of flavor. A longtime customer favorite—and the perfect sidekick to our BBQ Croissant Collab.

SAUCES AND SPREADS

Hot Sauces
Chile Verde (mild), Habanero (medium), Cranberry Habanero (medium hot), or Reaper (hot hot!)

Chili Crisp
A crunchy combo of garlic, sea salt, onion, sesame seed, and oil, for use on anything you might add hot sauce to like pizza, rice bowls, soups, mac and cheese, or avocado toast.

Whipped Brown Butter
Seasoned and slightly sweetened with a nutty flavor to spread on your English muffins, pancakes, toast, or quick breads.

Cherry Raspberry Jam
A small batch blend featuring seasonal fruits. Made fresh weekly with no preservatives, just the good stuff! Refrigerate.


Pre-order opens Wednesday at 12noon

Guarantee your menu favorites by ordering ahead. Pick up any time during the pop-up with the first name on the order. Pre-ordering closes 3am the day of the pop-up. Remaining quantities after the pre-sale will be available for walk-ups. Come early if you do not have a pre-order!
